    black eyed pea

    Black Eyed Peas is what is commonly referred to as koki beans(used to make koki). In this recipe, we would boil the peas as they are instead of blending them into a puree.
    Serve warm with fried plantains(dodo), potatoes(can be mashed), rice, fufu or as is.

    2-3 cups whole black Eyed Peas(you may use split black eyed peas but they may become really mashy by the time you are done cooking)
    1/3 cup palm oil or vegetable oil if you prefer
    2 large maggi cubes (or to taste)
    salt to taste
    2 fresh tomatoes, chopped
    1 onion bulb
    garlic
    ginger
    fresh leeks or green onions, chopped(to give it flavor)
    pepper (if you like the heat)

    1. Wash black eyed peas, & transfer to a pot. Pour enough water till peas are completely submerged in the water. Bring to a boil, checking often and adding more water as necessary.


    2. Check if peas are well cooked using a fork. You could use your fingers to press on a couple of peas and if they don't feel hard they are cooked. Also,when peas are ready, they should be easy to mash.


    3. Mash about half the peas in the pot using a large cooking spoon. Mashing just half gives the soup some much needed thickness and the right consistency.


    4. Add palm oil or vegetable oil and let boil for about 5-10 mins.


    5. Add the tomatoes,onions, leeks/green onions, garlic, ginger, pepper, salt, & maggi. Be sure to add the cubes one at a time while tasting.


    6. Lower the heat to and stir often to prevent it from sticking on the bottom of the pot. It should cook for another 10 mins or so and it is ready. Let cool for sometime and serve with fried plantains(dodo), potatoes (or mashed potatoes), rice, fufu or as is.
